Ingredients

- 2 lbs lamb roast, cubed
- 1/4 cup flour
- 1 tablespoon garlic, minced
- 1 tablespoon cumin
- 1 tablespoon vegetable oil
- 3 -5 tablespoons chili powder
- salt
- pepper
- 3 cups water
Recipe
- 1 heat oil in a heavy pot.
- 2 add lamb, salt and pepper, stirring until well browned and most of the liquid is evaporated.
- 3 add garlic and saute 1 minute more.
- 4 add flour, stirring until thoroughly coated.
- 5 add water all at once.
- 6 add cumin and chili powder.
- 7 stir thoroughly until gravy is dark and velvety smooth.
- 8 add more chili powder to taste.
- 9 bring to boil, reduce heat, cover and simmer 20 minutes, or until lamb is tender.
- 10 serve with rice and tortillas.
