Asado De Cerdo

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 10
  • 2 lbs lamb roast, cubed
  • 1/4 cup flour
  • 1 tablespoon garlic, minced
  • 1 tablespoon cumin
  • 1 tablespoon vegetable oil
  • 3 -5 tablespoons chili powder
  • salt
  • pepper
  • 3 cups water

Recipe

  • 1 heat oil in a heavy pot.
  • 2 add lamb, salt and pepper, stirring until well browned and most of the liquid is evaporated.
  • 3 add garlic and saute 1 minute more.
  • 4 add flour, stirring until thoroughly coated.
  • 5 add water all at once.
  • 6 add cumin and chili powder.
  • 7 stir thoroughly until gravy is dark and velvety smooth.
  • 8 add more chili powder to taste.
  • 9 bring to boil, reduce heat, cover and simmer 20 minutes, or until lamb is tender.
  • 10 serve with rice and tortillas.
