- 8 thick slices french bread
- 2 cups chopped tomatoes
- 2 cloves garlic, minced
- 2 tablespoons roasted red peppers, drained
- 1/4 cup chopped fresh parsley
- 4 teaspoons olive oil
- 2 teaspoons balsamic vinegar
Recipe
- 1 broil the bread on both sides until golden brown.
- 2 in sm bowl, mix the remaining ingredients.
- 3 toss to mix well.
- 4 spoon on top of toasted bread.
