Asian Tomato Rice

Total Time: 13 mins Preparation Time: 5 mins Cook Time: 8 mins

Ingredients

  • 3 tablespoons oil
  • 2 shallots, minced (optional)
  • 3 garlic cloves, minced
  • 2 tablespoons tomato paste
  • 2 tablespoons soy sauce or 1 -2 teaspoon fish sauce or 1/2-1 1/2 teaspoon maggi seasoning sauce
  • 1/8 teaspoon chinese five spice powder
  • 4 cups cooked and chilled jasmine rice
  • salt, as needed
  • ground black pepper, as needed
  • cilantro, as needed

Recipe

  • 1 in a large nonstick frying pan put the oil, shallots and garlic. cook over medium heat for 2 or 3 minutes until the edges of the garlic are a light brown.
  • 2 stir in the tomato paste, soy sauce, and chinese 5 spice powder and cook for another minute.
  • 3 add the rice and stir until well blended. add salt and ground black pepper to taste if desired.
  • 4 garnish with chopped fresh cilantro or a thinly sliced green onion.
  • 5 variations: stir in 1/4 - 1/2 cup frozen peas the last 2 minutes and/or add a cooked scrambled egg.
