Asian Tomato Rice

Ingredients
- 3 tablespoons oil
- 2 shallots, minced (optional)
- 3 garlic cloves, minced
- 2 tablespoons tomato paste
- 2 tablespoons soy sauce or 1 -2 teaspoon fish sauce or 1/2-1 1/2 teaspoon maggi seasoning sauce
- 1/8 teaspoon chinese five spice powder
- 4 cups cooked and chilled jasmine rice
- salt, as needed
- ground black pepper, as needed
- cilantro, as needed
Recipe
- 1 in a large nonstick frying pan put the oil, shallots and garlic. cook over medium heat for 2 or 3 minutes until the edges of the garlic are a light brown.
- 2 stir in the tomato paste, soy sauce, and chinese 5 spice powder and cook for another minute.
- 3 add the rice and stir until well blended. add salt and ground black pepper to taste if desired.
- 4 garnish with chopped fresh cilantro or a thinly sliced green onion.
- 5 variations: stir in 1/4 - 1/2 cup frozen peas the last 2 minutes and/or add a cooked scrambled egg.
