Baba Ghannouj ( Baba Ghanoush / Baba Gannoujh )

Ingredients

  • 1 medium eggplant, peeled (and cut into 1/2-inch cubes (about 3 cups)
  • 1/4 cup tahini
  • 1 tablespoon lemon juice
  • 1 garlic clove
  • 1/4 teaspoon black pepper
  • 1 dash cumin, ground
  • 2 tablespoons sesame seeds
  • 2 tablespoons fresh parsley, finely chopped

Recipe

  • 1 steam eggplant until tender, about 8 minutes.
  • 2 place cooked eggplant in food processor.
  • 3 add tahini (sesame paste),lemon juice, and garlic.
  • 4 puree.
  • 5 stir in remaining ingredients; spoon into serving bowl.
  • 6 garnish with parsley sprig.
  • 7 serve warm or chill.
