Ingredients
- 1 medium eggplant, peeled (and cut into 1/2-inch cubes (about 3 cups)
- 1/4 cup tahini
- 1 tablespoon lemon juice
- 1 garlic clove
- 1/4 teaspoon black pepper
- 1 dash cumin, ground
- 2 tablespoons sesame seeds
- 2 tablespoons fresh parsley, finely chopped
Recipe
- 1 steam eggplant until tender, about 8 minutes.
- 2 place cooked eggplant in food processor.
- 3 add tahini (sesame paste),lemon juice, and garlic.
- 4 puree.
- 5 stir in remaining ingredients; spoon into serving bowl.
- 6 garnish with parsley sprig.
