Baby Back Ribs - Candy Spicy Ginger

Ingredients

  • Servings: 5
  • 2 back ribs, full racks
  • 1 tablespoon salt
  • 1 1/2 tablespoons powdered ginger
  • 1/2 teaspoon pepper
  • 1 teaspoon onion powder
  • 1 teaspoon ground coriander
  • 1 tablespoon garlic
  • 1/2 cup apple cider vinegar
  • 4 tablespoons ginger, freshly crushed
  • 1 chili pepper, red long chopped fine
  • 1/3 cup honey or 1/3 cup molasses
  • 1/2 tablespoon brown sugar
  • 1 tablespoon ginger jam (optional)
  • 1 garlic clove, crushed
  • 3 teaspoons tomato paste
  • 1/3 cup onion, chopped
  • 1/2 lemon, juice of
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Recipe

  • 1 combine all dry spices and blend nicely.
  • 2 coat the back ribs and let stand to marinade for 3 hours or overnight in fridge.
  • 3 pre-heat oven to 300 degrees.
  • 4 place ribs in covered roasting pan place in oven and roast for 2 1/2 hours.
  • 5 combine all ingredients for sauce in a saucepan and bring to gentle boil for 20 min or until reduced by 1/3 or thickened to desired consistency.
  • 6 once ribs have roasted remove from oven and coat with the sauce and place back in oven for 30 minute or bbq for 5 min per side and then coat with sauce and bbg for an additional 5 min per side on low heat.
