Artichoke Heart Fritters

Ingredients

  • Servings: 10
  • 3 (14 ounce) cans artichoke hearts
  • 1 cup italian seasoned breadcrumbs
  • 1/2 cup freshly grated parmesan cheese
  • 1 teaspoon salt
  • 1 1/4 teaspoons pepper
  • 3 large eggs
  • oil (for frying)
  • 1 garlic clove, minced
  • 1/2 cup butter, melted
  • 1/2 teaspoon garlic salt

Recipe

  • 1 in shallow bowl combine bread crumbs,cheese, salt and pepper.
  • 2 in another shallow bowl beat the eggs.
  • 3 heat enough oil in a skillet to reach a depth of 2 inches.
  • 4 dip each artichoke heart in the beaten eggs and then dredge in bread crumb mixture.
  • 5 fry in hot oil until they are golden brown in small batches, approximately 6-8 minutes.
  • 6 drain on paper towels and place in chafing dish.
  • 7 serve hot with garlic butter.
