3 Cheese Artichoke Bites

Ingredients
- 1 onion, chopped
- 1 garlic clove, minced
- 1 tablespoon oil
- 2 (6 1/2 ounce) jars marinated artichokes, drained and chopped
- 6 eggs, beaten
- 1 cup cheddar cheese, shredded
- 1 cup mozzarella cheese, shredded
- 1 cup parmesan cheese, grated
- 1/2 teaspoon italian seasoning
- 1/4 cup fresh parsley, chopped
- 1/4 teaspoon pepper
- 1/8 teaspoon worcestershire sauce
- 1/8 teaspoon hot pepper sauce
- 1/4 cup italian seasoned breadcrumbs
- additional fresh parsley, chopped
Recipe
- 1 in a skillet over medium heat, saute onion and garlic in oil until tender; drain and set aside. combine artichokes, eggs, cheeses, seasonings, and sauces in a large bowl; mix well. stir in onion mixture and bread crumbs.
- 2 fill greased mini muffin cups 2/3 full. bake at 325 degrees for 15 to 20 minutes, until firm and golden.
- 3 serve warm, sprinkled with additional parsley, if desired.
