25-clove Garlic Soup

Ingredients

- 25 cloves garlic
- 1 large leek
- 8 potatoes
- 6 cups vegetable broth
- 3 tablespoons tomato paste
- 1/2 teaspoon cumin
- 1/2 teaspoon thyme
- 1 teaspoon salt
- 1/2 cup creme fraiche
Recipe
- 1 peel garlic.
- 2 cut the leek in chunks.
- 3 peel potatoes and cut in chunks.
- 4 boil the vegetable broth with tomato paste and herbes.
- 5 add garlic, leek and potatoes.
- 6 cover and cook on low heat for appr 40 minutes.
- 7 puree the soup (in a blender or by hand).
- 8 add creme fraiche and heat soup for 1 minute.
