Arroz Azafranado-saffron Rice Spain

Total Time: 1 hr Preparation Time: 30 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 1 1/2 lbs lamb (or chicken boneless)
  • 2 -3 tablespoons oil
  • 1 green pepper, diced
  • 1 garlic clove, crushed
  • 12 ounces rice (300 gms)
  • 1 medium onion, diced
  • 3 -4 tomatoes, peeled and cubed
  • 1 pinch saffron
  • pepper
  • salt
  • 1 lemon, juice of

Recipe

  • 1 place oil in saucepan; cook meat in hot oil.
  • 2 add onion, pepper, salt, tomatoes, green pepper and garlic and reduce heat.
  • 3 to medium temperature.
  • 4 after vegetables appear tender crisp, add salt, rice and a little water as needed.
  • 5 simmer until rice is cooked, remembering to add saffron and stir occasionally while cooking.
  • 6 serve with 1/2 lemon per person to squeeze over each serving.
