Artichoke Bell Pepper Pizza

Ingredients
- Servings: 4
- 1 teaspoon olive oil
- 1 cup red bell pepper, strips
- 1 cup orange bell pepper, strips
- 2 garlic cloves, minced and divided
- 1/4 cup light mayonnaise
- 1/8 teaspoon crushed red pepper flakes
- 1 (15 ounce) can artichokes
- 1 pre packaged pizza dough (i use boboli)
- 1/2 cup crumbled feta cheese
- 1/2 teaspoon dried thyme
Recipe
- 1 preheat oven to 450°f.
- 2 heat oil in a nonstick skillet over medium high heat.
- 3 add bell pepper strips, saute 3 minutes.
- 4 add half of minced garlic, saute one minute.
- 5 remove from heat, set aside.
- 6 place remaining half of garlic, mayonnaise and next 3 ingredients in a food processor; process until finely chopped.
- 7 place pizza crust on a baking stone.
- 8 spread artichoke mixture over pizza crust; top with bell pepper mixture.
- 9 sprinkle with feta cheese and thyme.
- 10 bake at 450°f for 14 minutes or until crust is crisp.
