Artichoke Chicken

Ingredients
- Servings: 4
- 7 tablespoons butter
- 1 slice finely minced bacon
- 1 garlic clove, finely minced
- 4 boneless chicken breasts
- 1 (12 ounce) can artichoke hearts
- 1/3 cup flour
- salt and pepper
- 1 cup chicken broth
- 1 cup wine
- 1/4 cup chopped fresh spinach
- 1/4 cup chopped tomato
- 1 tablespoon capers
Recipe
- 1 fry the bacon in the butter.
- 2 add garlic.
- 3 dredge chicken in flour.
- 4 add to the oil; brown.
- 5 add wine.
- 6 add salt and pepper.
- 7 add artichokes that have been chopped along with juice.
- 8 mix flour to chicken broth.
- 9 add to pan.
- 10 add capers
- 11 cook till chicken is done.
- 12 just before serving, add tomato and spinach.
