Artichoke Chicken

Total Time: 1 hr Preparation Time: 30 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 7 tablespoons butter
  • 1 slice finely minced bacon
  • 1 garlic clove, finely minced
  • 4 boneless chicken breasts
  • 1 (12 ounce) can artichoke hearts
  • 1/3 cup flour
  • salt and pepper
  • 1 cup chicken broth
  • 1 cup wine
  • 1/4 cup chopped fresh spinach
  • 1/4 cup chopped tomato
  • 1 tablespoon capers

Recipe

  • 1 fry the bacon in the butter.
  • 2 add garlic.
  • 3 dredge chicken in flour.
  • 4 add to the oil; brown.
  • 5 add wine.
  • 6 add salt and pepper.
  • 7 add artichokes that have been chopped along with juice.
  • 8 mix flour to chicken broth.
  • 9 add to pan.
  • 10 add capers
  • 11 cook till chicken is done.
  • 12 just before serving, add tomato and spinach.
