Ande Ki Kare (curried Eggs)

Ingredients

- 8 eggs, hard boiled and peeled
- 2 tablespoons oil
- 1 onion, finely chopped
- 1 teaspoon ginger, grated
- 3 garlic cloves, crushed
- 3 bay leaves
- 14 ounces crushed tomatoes
- 1/4 teaspoon ground turmeric
- 1/2 teaspoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 tablespoon garam masala
Recipe
- 1 heat the oil in a saucepan. add the onion, ginger, garlic, and bay leaves, and cook for four minutes, or until the onion is soft. add the tomato, turmeric, chili powder, cumin, coriander, 1 tsp salt, and 1 cup of water.
- 2 bring to a boil, then reduce heat and simmer for three minutes.
- 3 add the garam masala and eggs, then simmer for a minute or two to warm the eggs.
