Ande Ki Kare (curried Eggs)

Ingredients

  • Servings: 4
  • 8 eggs, hard boiled and peeled
  • 2 tablespoons oil
  • 1 onion, finely chopped
  • 1 teaspoon ginger, grated
  • 3 garlic cloves, crushed
  • 3 bay leaves
  • 14 ounces crushed tomatoes
  • 1/4 teaspoon ground turmeric
  • 1/2 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 tablespoon garam masala

Recipe

  • 1 heat the oil in a saucepan. add the onion, ginger, garlic, and bay leaves, and cook for four minutes, or until the onion is soft. add the tomato, turmeric, chili powder, cumin, coriander, 1 tsp salt, and 1 cup of water.
  • 2 bring to a boil, then reduce heat and simmer for three minutes.
  • 3 add the garam masala and eggs, then simmer for a minute or two to warm the eggs.
