Arabian Spinach

Total Time: 15 mins Preparation Time: 5 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 2 tablespoons olive oil
  • 1 onion, sliced
  • 2 garlic cloves, crushed
  • 3 1/2 cups fresh spinach, washed and shredded
  • 1 teaspoon cumin seed
  • 1 (15 ounce) can chickpeas, drained and rinsed
  • 1 tablespoon butter
  • salt and pepper

Recipe

  • 1 heat the oil in a large frying pan and fry the onion for about 5 minutes until softened.
  • 2 add the garlic and cumin seeds, then fry for another minute.
  • 3 add the spinach, in stages, stirring until the leaves begin to wilt.
  • 4 stir in the chick peas, butter and season with salt and pepper.
  • 5 reheat until just bubbling, then serve hot.
