Artichoke Balls

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • 1 (8 ounce) can artichoke hearts, drained and finely chopped
  • 1 cup seasoned bread crumbs
  • 2 eggs
  • 2 tablespoons olive oil
  • 2 tablespoons grated parmesan cheese
  • 1 tablespoon lemon juice
  • 2 garlic cloves, minced
  • 1/4 cup grated parmesan cheese

Recipe

  • 1 preheat oven to 350. in a medium bowl combine artichoke, bread crumbs, eggs, olive oil, 2 tablespoons parmesan, lemon juice and garlic.
  • 2 form mixture into 24 small balls, 1 inch in diameter, and roll in remaining parmesan cheese. set on a lightly greased baking sheet.
  • 3 bake artichoke balls until eggs are set throughout and balls are heated through, about 10 minutes.
