Apricots Stuffed With Pistachio Mint Quinoa

Ingredients

  • 1 garlic clove, roughly chopped
  • 1/4 cup cooked quinoa, cooled
  • 2 tablespoons lightly roasted pistachios
  • 1 tablespoon chopped fresh mint
  • 2 tablespoons crumbled feta cheese
  • 1/2 teaspoon fresh lime zest
  • 1 tablespoon lime juice
  • freshly cracked black pepper
  • 24 soft dried apricots

Recipe

  • 1 in food processor combine garlic, quinoa, pistachios, mint, cheese, lime zest and juice. pulse until finely chopped. season to taste with pepper.
  • 2 slice apricots down one side to form a pocket. stuff apricots with quinoa mixture.
