Apricots Stuffed With Pistachio Mint Quinoa

Ingredients
- 1 garlic clove, roughly chopped
- 1/4 cup cooked quinoa, cooled
- 2 tablespoons lightly roasted pistachios
- 1 tablespoon chopped fresh mint
- 2 tablespoons crumbled feta cheese
- 1/2 teaspoon fresh lime zest
- 1 tablespoon lime juice
- freshly cracked black pepper
- 24 soft dried apricots
Recipe
- 1 in food processor combine garlic, quinoa, pistachios, mint, cheese, lime zest and juice. pulse until finely chopped. season to taste with pepper.
- 2 slice apricots down one side to form a pocket. stuff apricots with quinoa mixture.
