Ajeen Beckford Vegie Wrap

Total Time: 7 mins Preparation Time: 5 mins Cook Time: 2 mins

Ingredients

  • 1 piece tortillas or 1 piece other wrap
  • 2 tablespoons garlic, yoghurt dressing
  • 3 ounces cooked rice
  • 2 tablespoons diced tomatoes
  • 1 ounce cucumber, julienne
  • as needed alfalfa sprout
  • 1 ounce broccoli floret
  • 1 ounce red onion, thinly sliced
  • 1 tablespoon capers

Recipe

  • 1 1. spread the tortilla with garlic yoghurt dressing.
  • 2 2. arrange the rice and then the vegetables into the centre with the capers.
  • 3 3. drizzle a little more dressing over the vegetables.
  • 4 4. roll up tight and serve.
  • 5 garlic yoghurt dressing 1pint.
  • 6 1pint non-fat plain yoghurt.
  • 7 1tbsp chopped parsley.
  • 8 2tbsp minced garlic.
  • 9 2tbsp dijon mustard.
  • 10 ¼ tsp black pepper.
  • 11 tt tabasco sauce.
  • 12 combine all the ingredients and chill until ready to use.
