Baby New Potatoes With Mint (bbq)

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 2 1/2 lbs baby red potatoes
  • 1/4 cup extra virgin olive oil
  • 1/2 teaspoon salt
  • 4 cloves garlic, minced
  • 1/4 teaspoon pepper
  • 2 tablespoons chopped fresh mint

Recipe

  • 1 scrub potatoes.
  • 2 cut each potato in half and place in bowl.
  • 3 (if they are really small, leave whole).
  • 4 toss potatoes with 2 tablespoons oil and half of the salt.
  • 5 wrap potatoes in tin foil packet and grill for about 20 minutes or until tender.
  • 6 remove from grill and empty packet into bowl.
  • 7 add garlic, pepper, half of the mint, remaining oil and salt.
  • 8 toss well to coat.
  • 9 sprinkle with remainder of mint and serve.
  • 10 (also good cold).
