After-the Holidays Turkey Soup

Total Time: 2 hrs 10 mins Preparation Time: 10 mins Cook Time: 2 hrs

Ingredients

  • Servings: 12
  • 1 roasted turkey carcass, plus any leftover meat, skin removed
  • 3 yellow onions, cut into 1 inch cubes
  • 3 boiling potatoes, cut into 1 inch cubes
  • 3 carrots, cut into 1 inch cubes
  • 3 bay leaves
  • 2 garlic cloves, whole
  • 1/2 cup fresh parsley, coarsely chopped
  • 1 tablespoon dried thyme
  • 1 teaspoon dried sage
  • 2 1/2 quarts chicken broth
  • salt and pepper

Recipe

  • 1 put all the ingredients except the salt and pepper in a large pot.
  • 2 bring to a boil over medium heat.
  • 3 reduce the heat and simmer gently for about 1 hour.
  • 4 remove the turkey carcass and pick off any meat attached to it, adding the meat to the pot.
  • 5 season the soup to taste with salt and pepper and serve.
