Aioli

Ingredients

  • Servings: 2
  • 1 egg yolk
  • 1/2-1 cup extra virgin olive oil
  • 1 -2 garlic clove, minced
  • salt and pepper

Recipe

  • 1 in a mortar, mash the yolk and garlic with the pestle until creamy.
  • 2 slowly add olive oil while mashing/stirring, until desired constancy/flavor.
  • 3 salt and pepper to taste--careful!
  • 4 it only takes a very small amount of each.
  • 5 just a couple shakes.
