Ingredients

- 1 egg yolk
- 1/2-1 cup extra virgin olive oil
- 1 -2 garlic clove, minced
- salt and pepper
Recipe
- 1 in a mortar, mash the yolk and garlic with the pestle until creamy.
- 2 slowly add olive oil while mashing/stirring, until desired constancy/flavor.
- 3 salt and pepper to taste--careful!
- 4 it only takes a very small amount of each.
- 5 just a couple shakes.
