Ajeen Grilled Tomato Vinaigrette

Total Time: 17 mins Preparation Time: 10 mins Cook Time: 7 mins

Ingredients

  • 2 lbs ripe tomatoes, halved and seeded
  • 1/4 cup extra virgin olive oil
  • 7 ounces red wine vinegar
  • 3 tablespoons chopped onions
  • 2 teaspoons garlic cloves, finely minced
  • tt salt and pepper

Recipe

  • 1 brush the tomatoes with some of the olive oil and grill until lightly charred and softened.
  • 2 cool, peel and finely dice.
  • 3 combine all ingredients in a blender and blend for 7 - 10 seconds and refrigerate overnight.
