Ajeen Grilled Tomato Vinaigrette

Ingredients
- 2 lbs ripe tomatoes, halved and seeded
- 1/4 cup extra virgin olive oil
- 7 ounces red wine vinegar
- 3 tablespoons chopped onions
- 2 teaspoons garlic cloves, finely minced
- tt salt and pepper
Recipe
- 1 brush the tomatoes with some of the olive oil and grill until lightly charred and softened.
- 2 cool, peel and finely dice.
- 3 combine all ingredients in a blender and blend for 7 - 10 seconds and refrigerate overnight.
