Albanian Vegetable Casserole (gjelle Me Zarzavata)

Ingredients

- 6 potatoes, peeled and thinly sliced
- 4 tomatoes, chopped
- 3 carrots, sliced thin
- 1/4 cup chopped celery
- 2 onions, finely chopped
- 2 garlic cloves, minced
- 3 tablespoons chopped parsley
- 1 1/2 teaspoons salt
- 1/2 teaspoon black pepper
- 2 cups water
- 1/4 cup olive oil
Recipe
- 1 preheat oven to 375°f
- 2 lay potatoes in the bottom of a greased baking dish.
- 3 combine tomatoes, carrots, celery, onions, garlic. parsley, salt and pepper, and mix well.
- 4 spread this mixture over the potatoes.
- 5 add the water.
- 6 bake for 45 minutes.
- 7 pour oil over vegetables.
- 8 bake 15 minutes more.
