Albanian Vegetable Casserole (gjelle Me Zarzavata)

Ingredients

  • Servings: 6
  • 6 potatoes, peeled and thinly sliced
  • 4 tomatoes, chopped
  • 3 carrots, sliced thin
  • 1/4 cup chopped celery
  • 2 onions, finely chopped
  • 2 garlic cloves, minced
  • 3 tablespoons chopped parsley
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon black pepper
  • 2 cups water
  • 1/4 cup olive oil

Recipe

  • 1 preheat oven to 375°f
  • 2 lay potatoes in the bottom of a greased baking dish.
  • 3 combine tomatoes, carrots, celery, onions, garlic. parsley, salt and pepper, and mix well.
  • 4 spread this mixture over the potatoes.
  • 5 add the water.
  • 6 bake for 45 minutes.
  • 7 pour oil over vegetables.
  • 8 bake 15 minutes more.
