Aioli (garlic Mayonnaise)

Ingredients

  • 3 garlic cloves, chopped
  • 1 large egg
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon salt
  • 1 pinch fresh ground black pepper
  • 1/2 cup extra virgin olive oil
  • 1 tablespoon parsley sprig (optional)

Recipe

  • 1 combine garlic, eggs, lemon juice, parsley (optional), salt and pepper in a good processor and puree.
  • 2 with processor running, slowly add olive oil in a continuous stream until mixture has formed a thick emulsion.
  • 3 chill.
