Aioli--style Potatoes

Ingredients

- 2 lbs tiny new potatoes
- 1/4 cup olive oil
- 1/4 cup butter, melted
- 1/3 cup mayonnaise
- 2 tablespoons fresh garlic, minced
- 2 tablespoons chopped fresh parsley
- 1 teaspoon chopped fresh basil
- salt and pepper, to taste
- parmesan cheese, for garnish
- parsley, for garnish
Recipe
- 1 halve potatoes and set aside.
- 2 in a large bowl, combine the next seven ingredients (olive oil to salt and pepper). whisk to combine well.
- 3 add potatoes and toss.
- 4 place potatoes in a roasting pan, uncovered, and roast at 350º for 35-40 minutes, stirring often, or until potatoes are tender.
- 5 garnish potatoes with parmesan and parsley.
