Americanized Shrimp Curry

Total Time: 2 hrs Preparation Time: 1 hr Cook Time: 1 hr

Ingredients

  • Servings: 6
  • 2 lbs shrimp, peeled and deveined
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 6 tablespoons butter
  • 1 (12 ounce) can coconut milk
  • 2 (14 ounce) cans chicken broth
  • 1 1/2 teaspoons curry
  • 1 (12 ounce) can mushrooms, drained
  • 1 (15 ounce) can baby corn, drained
  • 1 cup italian parsley, chopped
  • 2 tablespoons spice essence (emeril lagasse's essence)

Recipe

  • 1 in a large 5 quart dutch oven melt butter and add peppers, onion and garlic.
  • 2 saute over medium heat until soft about 45 minutes.
  • 3 add remaining ingredients except shrimp, cover and simmer for about 30 minutes.
  • 4 add shrimp and cook until shrimp turns pink, about 5 to 10 minutes.
