Agave-lime Grilled Chicken With Fresh Cherry Salsa

Ingredients

  • 1 1/2 lbs boneless skinless chicken breast halves
  • 1/4 cup fresh lime juice
  • 2 teaspoons lime zest
  • 1/4 cup agave nectar
  • 2 tablespoons olive oil
  • 1 tablespoon soy sauce
  • 1/2 teaspoon salt
  • 1/2 teaspoon fresh ground black pepper
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon garlic powder or 1 clove finely minced garlic
  • cayenne pepper, to taste
  • 1 cup pitted cherries, quartered
  • 2 tablespoons finely chopped red onions
  • 1 jalapeno, seeded and finely chopped

Recipe

  • 1 to make the marinade: place chicken in a ziplock bag. in a bowl whisk together marinade ingredients. pour mixture over the chicken and reseal, squeezing out excessive air. allow to marinate at least 4 hours in the refrigerator.
  • 2 to make the cherry salsa: mix ingredients and set aside. serve over or along side the chicken.
  • 3 to finish: preheat grill to medium high heat. once preheated, brush grill lightly with olive oil. place chicken (if desired lightly season) on grill and cook (with lid closed) 5-8 minutes per side until juices run clear (depending on thickness).

Apple Bbq Sauce Chicken Wings

  • 1 cup ketchup
  • 1/4 cup apple juice
  • 1/4 cup apple cider vinegar
  • 1/4 cup soy sauce
  • 3/4 teaspoon pepper
  • 3/4 teaspoon garlic powder
  • 1/3 cup peeled apple
  • 1/4 cup onion
  • 2 teaspoons green peppers
  • 1 tablespoon pepper
  • 1 tablespoon paprika
  • 2 tablespoons chili powder

Recipe

  • 1 preheat oven to 425°f.
  • 2 combine first 6 ingredients and process the apple, onion, and green pepper in a food processor. place all ingredients in a saucepan and bring to a boil. reduce heat and simmer for about 15 minutes.
  • 3 while the sauce is heating up,place all the rub ingredients in a bowl and stir together with a spoon. rub chicken wings on all sides with the spice mixture.
  • 4 arrange chicken wings in a pan that you have lined with foil and sprayed with cooking spray.
  • 5 bake in preheated oven for 15 minutes.
  • 6 after wings have baked for 15 minutes, remove from oven, pour sauce over the wings making sure they are coated on all sides and return to oven.
  • 7 bake for 20 more minutes turning occasionally (every 4 to 5 minutes) so that they are well coated.

  • 3 tablespoons hoisin sauce
  • 3 tablespoons soy sauce

  • 7 * i usually skip the marinating part and just make the sauce. i dip the chicken pieces in a batter of 4 egg whites, whip egg whites in a medium bowl until foamy. stir in 2/3cup of mochiko until it has a pasty consistency. dip the pieces in the batter and deep fry. this batter gives it a light fluffy texture, the way you get them in the restaurants. you can find mochiko in the asian aisle of most grocery stores. flour will not produce the same kind of texture; it really is worth finding the mochiko if you plan on making it this way.

Recipe

  • 1 cut ribs into 4 rib sections, place ribs in large saucepan or dutch oven.
  • 2 add water to cover and bring to boil.
  • 3 reduce heat, cover and simmer for 1 hour or until ribs are tender.
  • 4 drain.
  • 5 heat oven to 350°f.
  • 6 line 15x10x1-inch baking pan with foil.

  • 1 lb dry pasta (linguine or fettucine)

  • 1 lb firm tofu, drained and cut into cubes

  • 1 lb boneless lamb sirloin, cut into 1/2 inch pieces

  • 1 lb cremini mushroom, sliced

  • 1 combine the soy sauce, sesame oil, worcestershire sauce, brown sugar, chili sauce, garlic, and most of the green onions in a large zip lock bag, then add the lamb. seal and marinate in the refrigerator for 8-24 hours, turning the bag occasionally.
  • 2 preheat the oven to 425 degrees. heat some oil in a large oven-proof skillet over medium high heat. remove lamb from bag, reserving marinade. add lamb to pan, cook 6 minutes, browning on all sides. place pan in oven, and bake at 425 degrees for 15 minutes or until meat thermometer registers 155-160 degrees (medium) or until desired degree of doneness. let stand 5 minutes before slicing.
  • 3 bring reserved marinade to a boil in a small saucepan. reduce heat, and simmer 5 minutes. cut lamb into 1/4 inch thick slices and drizzle with sauce and the remaining green onions.

Adobo De Chile

  • 8 garlic cloves, unpeeled
  • 8 dried ancho chiles
  • 1 1/2 teaspoons dried oregano
  • 1/2 teaspoon black pepper
  • 1/8 teaspoon cumin seed
  • 4 cloves, whole (optional)
  • 1/3 cup chicken stock or 1/3 cup chile soaking water
  • 1 teaspoon salt

Recipe

  • 1 toast the unpeeled garlic until soft and sweet-smelling. remove from heat source and cool. pull of the skins and chop roughly.
  • 2 toast the chiles until skin bubbles. remove from heat. put in small bowl of water to rehydrate. drain. (use the soak water for the recipe liquid if desired.).
  • 3 pulverize the oregano, pepper, cumin and close in a spice grinder or mortar. place in a molcajete or blender. add the chiles and garlic.
  • 4 measure in the liquid and blend to a paste. if needed, add more liquid unti everything in the blender is combining but as thick as possible.
  • 5 remove from blender. (i take the bottom off mine to get the paste out.)this is ready to use in a recipe at this point. further cooking is necessary to use in canning.
  • 6 to use for canned chiles:.
  • 7 put paste in a bowl and stir in liquid until it's a pourable consistency.
  • 8 heat an empty very heavy frying pan for a few minutes over medium-high heat. film the bottom of the pan with a small amount of oil. test temperature by dropping a little mixture into pan. if it sizzles sharply, the pan is hot enough.
  • 9 pour all mixture into the pan, don't let the temperature drop. stir constantly until the mixture has darkened and turned into a thick mass. usually this takes about 5 minutes.
  • 10 turn heat down to simmer and add liquid of your choice to the consistency you need. simmer uncovered for another 5 minutes ro so to develop flavors.
  • 11 cool and work through a food mill or push through a sieve until there are no lumps.

Adobo Style Shrimp (filipino)

  • 1 lb medium shrimp, unshelled

  • 1/4 cup water
  • 1/8 cup soy sauce

Recipe

  • 1 wash shrimp and cut off whiskers. drain.
  • 2 place in pan or wok, add all ingredients except sugar and cooking oil.
  • 3 cook shrimp until not quite cooked on med heat, maybe 2-4 minutes depending on your shrimp size.
  • 4 drain shrimp (along with garlic). set sauce aside, and add the sugar.
  • 5 heat cooking oil and fry shrimp and garlic together on med low heat.
  • 6 when garlic is lightly browned, return the sauce to the pan and finish cooking shrimp.

  • 2 in mixing bowl, combine both packages of cream cheese, butter and flour; beat until soft dough forms. wrap in wax paper and chill 1 hour.
  • 3 in a large skillet, brown ground meats, then drain. return meat to skillet and add onion and saute. add garlic, cumin, seasoned salt and jalapeno. stir in tomato puree, pine nuts and raisins. simmer about 10 minutes.
  • 4 when dough chills, roll out 1/4 inch thickness and cut with a large biscuit cutter. place a spoonful of the meat mixture on each dough round.
  • 5 with finger dipped in beaten egg, spread egg around edges of dough, fold over and press edges with a fork. place empanadas on a greased baking sheet and bake for 10-12 minutes or until golden brown.

  • 1 in a bowl, mash the yellow curry paste with about 2 tablespoons of chicken broth to help dissolve the paste; whisk in remaining chicken broth, sugar, curry powder, salt, light soy sauce, and coconut milk. set aside.
  • 2 heat a wok or large skillet over high heat for about 30 seconds; pour in the oil. let the oil heat until shimmering, about 30 more seconds. stir the chicken, garlic, and ginger into the hot oil; cook and stir until the chicken has begun to brown and the garlic and ginger are fragrant, about 2 minutes. stir in the onion and potatoes, toss all ingredients in the hot oil, and pour in the sauce mixture. bring the sauce to a boil, reduce heat, and cover the wok. simmer until the chicken is cooked through and the potatoes are tender, 20 to 25 minutes. serve over cooked jasmine rice.

Adovada Wet Rub

  • 2 teaspoons coriander seeds
  • 2 teaspoons cumin seeds
  • 1 teaspoon black peppercorns
  • 8 garlic cloves
  • 1 tablespoon salt
  • 1/4 cup red chili powder (chimayo or ancho preferred)
  • 2 teaspoons mexican oregano
  • 2 teaspoons dried thyme
  • 1 teaspoon cinnamon, ground mexican (canela)
  • 1/2 cup cider vinegar
  • 2 tablespoons olive oil

Recipe

  • 1 toast the coriander, cumin, and peppercorns in a small, heavy skillet over moderate heat, stirring until the spices are fragrant and begin to brown, about 2 minutes.
  • 2 transfer spices to a plate to cool.
  • 3 crush into a coarse paste along with the peeled garlic cloves,using a mortar and pestle or a small chopper/blender.
  • 4 mix in the salt, chili powder, oregano, thyme, cinnamon, vinegar and olive oil; blend well.
  • 5 rub the mixture over the meat to be grilled.
  • 6 let the rubbed meat sit at room temperature for an hour before grilling, or cover it and refrigerate it overnight.

Asian Ostrich Meatball

  • 1 lb ground ostrich
  • 1/8 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 2 tablespoons oil
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 2 tablespoons cornstarch
  • 2 tablespoons soy sauce
  • 1/4 cup cherries, chopped
  • 1 tablespoon sesame seeds
  • 1 (6 ounce) can crushed pineapple in juice
  • 1/4 cup chopped onion
  • 1/2 cup sugar
  • 1/2 cup vinegar
  • 1/2 cup pineapple juice

Recipe

  • 1 sprinkle garlic powder and salt over ostrich, stir until well distributed.
  • 2 shape meat into about 30 small balls. brown meat balls in hot oil. remove meat balls from skillet.
  • 3 dissolve corn starch in pineapple juice.
  • 4 place all remaining ingredients except cornstarch mixture in a big pan or skillet.
  • 5 cover and cook over medium heat for 15 minutes. add cornstarch mixture. raise heat and stir constantly until mixture boils.

  • 1/2 cup heavy cream

  • 1 heat oil and butter in a soup pot and sauté onion and garlic until soft.
  • 2 add apples and parsley, cook 3 min, then add stock, juice, salt and pepper.
  • 3 bring to a boil, cover and cook on low heat for 15-20 min until apples are tender.
  • 4 cool slightly, then purée until smooth with an immersion blender or food processor (use caution, because hot soup can expand and splatter when pureed).

  • 1 cup bean sprouts
  • 2 teaspoons snipped chives

  • 2 mix all ingredients, set aside. you'll need half-the remainder stores well in the fridge.
  • 3 noodles:.
  • 4 in a bowl, pour boiling water over the hokkien noodles, broccoli and shredded snow peas. allow to stand for 3 minutes, drain.
  • 5 heat a wok as high as possible, add the oil and stir fry the lamb slices and garlic until fragrant (2-3 minutes at domestic temps).
  • 6 add the noodles, broccoli and snow peas and toss for a few minutes.
  • 7 add the chili paste and half the sauce and toss a couple more minutes, then add the beaten egg continuing to toss.
  • 8 lastly add the bean shoots and chives, toss briefly and serve.

Adobong Pusit Filipino Squid

  • 1/2 cup vinegar
  • 1/2 teaspoon pepper
  • 5 garlic cloves

  • 1 bay leaf

Recipe

  • 1 clean squid.
  • 2 chop tomatoes.
  • 3 crush garlic.
  • 4 slice onion.
  • 5 combine water, vinegar, pepper, sugar, salt, bay leaf and half of the garlic.
  • 6 marinate squid in this mixture for 1 hour.
  • 7 drain squid, keeping the marinade.
  • 8 in pan, saute onion, remaining garlic and tomato in the oil.
  • 9 add drained squid.
  • 10 saute until juice evaporates, about 10 minutes.
  • 11 strain marinade.
  • 12 add to squid mixture.
  • 13 simmer 15 minutes.

  • 1/2 tablespoon fresh gingerroot, peeled and finely chopped
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, pressed

  • 1 1/4 lbs boneless beef top sirloin steaks, cut to 1/4-in strips

Adobo, Garlic & Parmesan Potato Oven Fries

  • 1 preheat oven to 375°f.

  • 3/4 cup applesauce
  • 1/2 cup ketchup
  • 2 cups brown sugar
  • 6 tablespoons lemon juice
  • 2 tablespoons worcestershire sauce

  • 1/2 teaspoon paprika

  • 1 mix the adobo spice (or you can make your own adobo spice by combining equal amounts of cumin, onion powder, salt, ground black pepper, garlic powder, and turmeric), and oregano.
  • 2 pre-heat an iron skillet, preferably an iron grilling skillet on medium-high heat. coat the skillet well with the olive oil.
  • 3 prepare the fish by rinsing with cold water and pat dry with a paper towel or cloth. apply the spice mixture to both sides of the cod fillets.
  • 4 add cod fillets to the skillet and cook for 3 minutes on each side. add lime juice to the skillet after the fish is flipped.

Adriatic Fish Stew Over Angel Hair Pasta

  • 1 (14 1/2 ounce) can no-salt-added diced tomatoes
  • 1/2 cup dry wine
  • 1/4 cup low sodium vegetable broth
  • 3/4 lb fresh mussels, in the shell well scrubbed and debearded
  • 1/4 lb medium shrimp, peeled and deveined
  • 1 tablespoon red wine vinegar
  • 8 ounces angel hair pasta, cooked al dente according to package directions and drained (dried or fresh)

  • 1 heat the olive oil in a nonstick stock pot over medium-low heat.
  • 2 add the onion and garlic; saute for 4 minutes, until onion is limp, taking care to not let the garlic burn.

  • 3 -4 lbs chicken wings (we prefer drumettes)

  • 1 combine dry ingredients in a plastic bag, shake to mix.
  • 2 be sure to break-up chunks of brown sugar.
  • 3 if using whole wings cut them into three pieces and reserve tips for stock.
  • 4 coat chicken pieces with oil, use enough to just coat the chicken.
  • 5 sprinkle the dry rub over the chicken and refrigerate for 1 hour (minimum).
  • 6 now, here comes the adjustable part, the longer you keep the spice on the wings, the hotter they get.
  • 7 i've even frozen the wings with the rub on, apparently the cold temps don't stop the process because those wings were almost too hot to eat!
  • 8 using the direct method, grill the wings over a charcoal or gas grill (turning often) until done, 15 minutes or so.
  • 9 can be done under a broiler as well without too much sacrifice in flavor, but more to clean up.

  • 10 peppercorns

  • 1 trim beans to fit jar and slice carrots to match the beans.
  • 2 cook carrots and beans in hot water for 3 minutes then drain.

  • 2 pound the both sides of the flank steak or beef slice. be careful not to tear through the meat. the piece of meat should be large enough to hold the stuffing inside the roll, at least 8 x 11 inches or preferably larger.
  • 3 in a mixing bowl, combine the ground meat, raw egg, grated cheese, breadcrumbs, minced garlic, chopped parsley, minced bacon, peas and salt and pepper.
  • 4 shell the hard-boiled eggs and slice off the ends to expose the yolk.
  • 5 lay the beef slice on the work surface so the width runs left to right. lay the mortadella or cooked ham over the top of the meat slice then spread the ground meat mixture on top with the bottom of a spoon, but leave some space along the edges. place the hard-boiled eggs in a row from end to end so the exposed yolks touch one another.
  • 6 have the butcher’s twine handy, then pick the beef slice from side nearest you, and snugly overlap the slice around the hard-boiled eggs. fold in the outside ends and finish rolling the beef. next, run the twine a couple of times around the length of the roll to hold in the ends. tie a knot and then run the twine around the entire length and circumference of the roll. it is best to use as much twine as necessary to hold in the stuffing. snugly tie the roll, but not too tight or it will squeeze out the stuffing.
  • 7 place a deep pan over moderately high heat and cook the onions until transparent, then add the meat roll and brown it on all sides. lower the heat to medium then pour in the red wine and let it evaporate. reduce the heat to low, add the bay leaf, beef broth or water (enough to immerse at least half of the roll) and then stir in and dissolve the tomato paste. cover the pan and simmer for 30 minutes, turn the meat to evenly brown the roll.
  • 8 when the farsumagru is finished cooking, remove it from the pan and let it cool on a cutting board. salt and pepper the remaining sauce and simmer a minute or two longer.
  • 9 untie the roll and slice into medallions. ladle the sauce onto a serving dish or individual dinner plates and arrange the farsumagru medallions on top.
  • 10 that's it!

  • 1/2 cup low sodium chicken broth
  • 2 tablespoons cornstarch
  • 2 tablespoons soy sauce
  • 1 teaspoon sugar
  • 1 teaspoon dark sesame oil
  • 2 teaspoons canola oil
  • 1/2 lb lamb tenderloin, cut into thin strips
  • 2 teaspoons grated fresh ginger
  • 1 clove garlic, minced
  • 3 1/2 ounces thin rice noodles
  • 8 cups hot water
  • 1 small savoy cabbage, thinly sliced
  • 6 ounces sliced mushrooms
  • 2 carrots, finely chopped

Recipe

  • 1 whisk together broth, cornstarch, soy sauce, sugar and sesame oil heat 1 tsp canola oil in large skillet over high heat, then add the lamb.
  • 2 saute until browned, stir in the ginger and garlic.
  • 3 saute until fragrant about 1 minute.
  • 4 transfer to a bowl and wipe out the skillet.
  • 5 cook noodles according to pkg directions.
  • 6 heat the remaining 1 tsp canola oil in the skillet, then add the cabbage, mushrooms and carrots.
  • 7 cook until the cabbage begins to wilt and the veggies are tender.
  • 8 stir in the lamb mixture and the broth mixture.
  • 9 bring to a boil stirring constantly.
  • 10 reduce heat and simmer, uncovered until the sauce begins to thicken about 2 min.
  • 11 stir in the noodles.
