Antipasta Cauliflower Pasta

Ingredients
- Servings: 2
- 1 chicken breast
- 1/2 head cauliflower
- 1/2 yellow onion
- 1 bunch green onion
- 4 -5 mixed mushrooms
- handful basil (up to you the amount but more is always good in my opinion)
- 1 (14 1/2 ounce) can diced tomatoes (flavored is best)
- 1/2 cup pasta sauce (your favorite)
- parmesan cheese or feta, if you want
- garlic salt
- pepper
Recipe
- 1 in a pot boil cauliflower with diced tomatoes for around 10 minutes to get the flavor into the cauliflower. add garlic salt and pepper to taste.
- 2 in a separate pan cook chicken for 10-15 minutes in pasta sauce.
- 3 add onions (yellow and green), basil, mushrooms, and garlic salt and pepper to taste to the chicken. cook for another five minutes or until veggies are to your liking.
- 4 serve chicken and veggies over strained cauliflower and tomatoes. add parmesan cheese or feta now if you want.
