Antipasta Cauliflower Pasta

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • Servings: 2
  • 1 chicken breast
  • 1/2 head cauliflower
  • 1/2 yellow onion
  • 1 bunch green onion
  • 4 -5 mixed mushrooms
  • handful basil (up to you the amount but more is always good in my opinion)
  • 1 (14 1/2 ounce) can diced tomatoes (flavored is best)
  • 1/2 cup pasta sauce (your favorite)
  • parmesan cheese or feta, if you want
  • garlic salt
  • pepper

Recipe

  • 1 in a pot boil cauliflower with diced tomatoes for around 10 minutes to get the flavor into the cauliflower. add garlic salt and pepper to taste.
  • 2 in a separate pan cook chicken for 10-15 minutes in pasta sauce.
  • 3 add onions (yellow and green), basil, mushrooms, and garlic salt and pepper to taste to the chicken. cook for another five minutes or until veggies are to your liking.
  • 4 serve chicken and veggies over strained cauliflower and tomatoes. add parmesan cheese or feta now if you want.
