Arminyan Plov (armenian Pilaf)

Total Time: 1 hr 15 mins Preparation Time: 15 mins Cook Time: 1 hr

Ingredients

  • Servings: 8
  • 1 1/2 cups bulgur wheat (kasha)
  • 1 onion, chopped
  • 1 garlic clove, minced
  • 2 tablespoons olive oil
  • 2 cups chicken broth
  • 1/4 cup almonds, slivered
  • 1 1/2 cups chickpeas, cooked
  • 2 tablespoons lemon juice
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon cardamom
  • 1/2 teaspoon allspice
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon pepper
  • 1/2 cup raisins
  • sour cream

Recipe

  • 1 sauté onion & garlic in olive oil until soft.
  • 2 add kasha & stir well.
  • 3 add all remaining ingredients except sour cream.
  • 4 bring to a boil, reduce heat to simmer, cover, & cook until liquid is absorbed.
  • 5 top each serving with a generous dollop of sour cream.
