Asian Tomato & Rice Soup

Ingredients

- vegetable oil
- 1 garlic clove, crushed
- 1 in piece ginger, grated
- 1 red chili pepper, finely chopped
- 2 stalks lemongrass, woody outer leaves discarded, finely chopped
- 1/4 teaspoon cumin seed
- 1/4 teaspoon ground coriander
- 1 (14 ounce) can chopped tomatoes
- 2 tablespoons tamarind paste
- 3 tablespoons basmati rice
Recipe
- 1 heat 1 tbsp oil in a pan, then cook the garlic, ginger, chili and lemon grass for a couple of minutes.
- 2 add the spices and cook for a minute, then tip in the tomatoes, tamarind and 2.5 cups water and simmer for 5 minutes. blend until smooth.
- 3 heat up again and add the rice, then simmer for 10-12 minutes or until the rice is cooked.
