Ajeen Beckford Lamb Kebabs With Chimichurri Sauce

Ingredients
- 8 garlic cloves
- 4 ounces chopped onions
- 3 tablespoons lemon juice
- 2 tablespoons oregano
- 1 bunch chopped parsley
- 7 ounces olive oil
- 2 ounces sherry wine vinegar
- 1 teaspoon salt
- 1 tablespoon crush pepper
- 1/2 teaspoon pepper
- 2 1/2 lbs trimmed lamb loin
Recipe
- 1 1. place the ingredients in a food processor and pulse until blended but still with some texture (not pureed).
- 2 2. cut the lamb into ¾â€? cubes and coat with 1/2 of the sauce. place in refrigerator and marinate for 4 to 6 hours. reserve remaining sauce for service.
- 3 3. skewer lamb and grill. serve with reserved sauce.
