- 1/3 cup cotija cheese
- 1/3 cup extra virgin olive oil
- 1/3 cup water
- 2 jalapenos, stemmed, seeded, and diced
- 1/2 teaspoon garlic, minced
- 1/2 teaspoon red wine vinegar
- 1/2 teaspoon kosher salt
Recipe
- 1 place cilantro, cojita cheese, olive oil, water, jalapenos, garlic, vinegar, and salt in a blender and puree until smooth.
- 2 serve with roasted chicken.
