Asian Grilled Lamb Tenderloin With Pineapple

Ingredients

- 2 lbs lamb tenderloin
- 1 (6 ounce) can pineapple juice
- 3 tablespoons soy sauce
- 2 tablespoons minced fresh garlic
- 2 tablespoons minced fresh ginger
- 1 1/2 teaspoons coarse salt
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon ground black pepper
- 2 cups peeled and cubed fresh pineapple (1-inch pieces)
Recipe
- 1 combine everything except pineapple in large zip top bag. press out as much air as possible and seal bag. marinate in refrigerator 1 to 24 hours.
- 2 preheat grill to medium-hot. drain marinade. place tenderloins on grill and cook 10 minutes on each side, or to internal temperature of 160°.
- 3 skewer pineapple. add to grill last 6 minutes, turning halfway through.
- 4 slice lamb 1/2" thick and serve with grilled pineapple.
