Asian Grilled Lamb Tenderloin With Pineapple

Ingredients

  • Servings: 8
  • 2 lbs lamb tenderloin
  • 1 (6 ounce) can pineapple juice
  • 3 tablespoons soy sauce
  • 2 tablespoons minced fresh garlic
  • 2 tablespoons minced fresh ginger
  • 1 1/2 teaspoons coarse salt
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground black pepper
  • 2 cups peeled and cubed fresh pineapple (1-inch pieces)

Recipe

  • 1 combine everything except pineapple in large zip top bag. press out as much air as possible and seal bag. marinate in refrigerator 1 to 24 hours.
  • 2 preheat grill to medium-hot. drain marinade. place tenderloins on grill and cook 10 minutes on each side, or to internal temperature of 160°.
  • 3 skewer pineapple. add to grill last 6 minutes, turning halfway through.
  • 4 slice lamb 1/2" thick and serve with grilled pineapple.
