Asparagus Pasta (warm Or Cold)

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • 4 ounces angel hair pasta (i prefer whole grain or wheat)
  • 10 asparagus spears, cut in bite-sized pieces
  • 1 tomato, cut in bite-sized pieces
  • 1/2 carrot, shredded
  • 1/2 red onion, diced
  • 1/4 cup fresh basil, chopped
  • 2 tablespoons extra virgin olive oil
  • 1/4 cup balsamic vinegar
  • 1/2 lemon, juice of
  • garlic, to taste
  • salt and pepper, to taste
  • grated parmesan cheese (optional) or romano cheese (optional) or asiago cheese (optional)

Recipe

  • 1 cook pasta according to package directions.
  • 2 steam or sauté asparagus until just tender; rinse with cold water.
  • 3 sauté onion and carrot with garlic until tender, about three minutes.
  • 4 add vegetables, oil and basil to pasta. add remaining ingredients incrementally, to taste.
  • 5 sprinkle with cheese, if desired. enjoy warm or chilled.
