Asparagus Pasta (warm Or Cold)

Ingredients
- 4 ounces angel hair pasta (i prefer whole grain or wheat)
- 10 asparagus spears, cut in bite-sized pieces
- 1 tomato, cut in bite-sized pieces
- 1/2 carrot, shredded
- 1/2 red onion, diced
- 1/4 cup fresh basil, chopped
- 2 tablespoons extra virgin olive oil
- 1/4 cup balsamic vinegar
- 1/2 lemon, juice of
- garlic, to taste
- salt and pepper, to taste
- grated parmesan cheese (optional) or romano cheese (optional) or asiago cheese (optional)
Recipe
- 1 cook pasta according to package directions.
- 2 steam or sauté asparagus until just tender; rinse with cold water.
- 3 sauté onion and carrot with garlic until tender, about three minutes.
- 4 add vegetables, oil and basil to pasta. add remaining ingredients incrementally, to taste.
- 5 sprinkle with cheese, if desired. enjoy warm or chilled.
