Asparagus Pesto Pasta

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 1 lb fresh asparagus, roughly chopped
  • 3 fresh basil leaves or 3 a dash dried basil
  • 1/4 cup parmesan cheese, grated
  • 1 garlic clove, raw
  • 1/4 cup pecans, chopped
  • 3 tablespoons olive oil, divided
  • 8 ounces spaghetti or 8 ounces egg noodles

Recipe

  • 1 prepare pasta according to package directions. when ready, drain and then toss with remaining tablespoon of olive oil.
  • 2 meanwhile, combine asparagus, basil, parmesan cheese, garlic, pecans, and 2 tablespoons olive oil in a blender or food processor and process until smooth.
  • 3 serve asparagus pesto over prepared pasta.
