Asparagus Parmigiano

Ingredients

- 1 lb fresh asparagus, trimmed
- 1 onion, roughly chopped
- 2 garlic cloves, minced
- 1 1/2 tablespoons olive oil
- 1/2 teaspoon salt
- 1 (14 ounce) can chopped tomatoes, in tomato sauce
- 1/4 teaspoon thyme
- 2 ounces mozzarella cheese, thinly sliced
- 1 tablespoon parmesan cheese, grated
Recipe
- 1 lightly grease a shallow baking dish; preheat the oven to 350°f.
- 2 steam asparagus until crisp tender; arrange in baking dish.
- 3 sauté onion and garlic in olive oil in saucepan until golden.
- 4 add tomatoes, salt and thyme; simmer uncovered 15 minutes.
- 5 pour sauce over asparagus.
- 6 place slices of mozzarella cheese over top.
- 7 sprinkle with grated parmesan cheese.
- 8 bake in preheated oven for 30 minutes.
