Asparagus Parmigiano

Total Time: 1 hr Preparation Time: 15 mins Cook Time: 45 mins

Ingredients

  • Servings: 2
  • 1 lb fresh asparagus, trimmed
  • 1 onion, roughly chopped
  • 2 garlic cloves, minced
  • 1 1/2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1 (14 ounce) can chopped tomatoes, in tomato sauce
  • 1/4 teaspoon thyme
  • 2 ounces mozzarella cheese, thinly sliced
  • 1 tablespoon parmesan cheese, grated

Recipe

  • 1 lightly grease a shallow baking dish; preheat the oven to 350°f.
  • 2 steam asparagus until crisp tender; arrange in baking dish.
  • 3 sauté onion and garlic in olive oil in saucepan until golden.
  • 4 add tomatoes, salt and thyme; simmer uncovered 15 minutes.
  • 5 pour sauce over asparagus.
  • 6 place slices of mozzarella cheese over top.
  • 7 sprinkle with grated parmesan cheese.
  • 8 bake in preheated oven for 30 minutes.
