Avocado Soup

Ingredients

  • Servings: 6
  • 3 cups chicken broth
  • 1 cup half-and-half
  • 1 tablespoon chopped onion
  • 3/4 teaspoon salt
  • 1/4 teaspoon chopped fresh cilantro
  • 1 dash pepper
  • 2 large avocados, cut up
  • 1 garlic clove, crushed

Recipe

  • 1 place 1 1/2 cups of the chicken broth and the remaining ingredients in blender or food processor. cover and blend on medium speed, or process, until smooth. stir remaining broth into avocado mixture.
  • 2 cover and refrigerate about 2 hours or until chilled. garnish with sour cream and paprika or avocado slices if desired.
